Paleo Diet Experience- June 23, 2015
Since starting a Paleo diet, I have learned that it really is a hunting and gathering diet. You have to hunt for things you can eat. On the other hand, it makes shopping easy because I only have to go to two sections of the store: meat and produce aisle. Now when it comes to Paleo restaurants, the hunting and searching ends with Kara Lynn's Kitchen. It is just what I need: no dairy, no sugar, no gluten, no nightshades, and great service.
Today, I ordered stir fry vegetables and a carrot muffin with grass-fed butter from Ireland. I devoured the muffin and told Amy my server that this is something I had been craving for a long time. I raved on and on about the muffin like a dog with a bone. She must have thought I looked like a hungry cave man as I consumed the stir-fry vegetables she set before me. After my meal, I was shocked when she wanted to send me home with a carrot muffin and pork leek soup to go. Not only that, Amy brought out plastic wrap and wrapped my PICC line to keep it from getting rained on. I am always amazed how God uses little things like this to remind me of how much he loves me.
